Ingredients
1 1/2 cup gluten-free flour
4 teaspoons baking powder
1 cup greek yogurt
1 cup cottage cheese
2 eggs
Everything bagel seasoning if desired
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Blend cottage cheese until smooth.
3. In a bowl, mix flour and baking powder.
4. Add Greek yogurt, blended cottage cheese, and eggs. Mix until a sticky dough forms.
5. Divide dough into 6 parts, roll each into a ball, and poke a hole in the center.
6. Brush with egg wash and top with seasoning.
7. Bake 20–25 minutes until golden.
Notes
For extra chew, chill the shaped dough for 15 minutes before baking. Store cooled bagels in an airtight container for up to 5 days or freeze for up to 2 months.
